Can I do that by just selecting the parts I want to mesh as "Master Reps" and then start adding from there? I usually don't run simulations on assemblies so I have to relearn every time I do this.

Damian, When you zip the assembly, you have to include all the subcomponents.  It may be better to build this with the beam element tool, if you're only trying to get the weight rating for the structure.

You could constrain the mid point of the beam to constrain movement away from symmetry-plane.Or if the analysis is symmetric you could even chop off half and add symmetry constraints.
